VIGAN'S ESKWELA DE LOS MATADEROS: Training ground for World Class butchers






Vigan’s Eskwela de los Mataderos continues to produce world class butchers. This is in line with the city’s vision to train its residents and other persons interested to acquire skills in order to become globally competitive. In cooperation with TESDA (Technical Education and Skills Development Authority) which provides scholarship grants to participants, the City Government of Vigan through the Eskwela de los Mataderos has recently paid tribute to its 5th batch of graduates. These certified butchers can easily be employed locally or work abroad where there is great demand for this kind of job.

I hope that the so-called Vigan World Class butchers will not be recruited by New Ilaga Vigilantes in war-torn Mindanao. In the 1970’s, the Ilagas butchered Moros by the hundreds.

There will be a time that more TESDA-trained butchers than hogs to be slaughtered in Vigan. Bagnet and loganiza industry depends on outside suppliers coming from Pangasinan province and elsewhere. Traders can dictate their price and have no guarantee of steady supply of hogs. Metro Vigan's backyard hog raisings are not enough to supply the industry’s daily needs. The City Government should support longaniza “cottage” industry. Please no lip service.

We are not training butchers for Vigan alone. In fact there are those who come from other towns of Ilocos Sur and the neighboring provinces. Kaya nga maraming interested kasi in demand ang butchers nationwide and abroad hindi lang po sa Vigan.

The City Government has long been supporting the Longganisa Industry. Soft loans have been extended to longganisa-makers through the City's Livelihood program. Trainings, quality control management, attendance to trade fairs , branding and other similar activities are also in place. The fact that the City conducts a yearly Vigan Longganisa festival to promote the product is a manifestation of an all out support. NO LIP SERVICE, ACTION ONLY.

Think about Vigan longaniza for export not about annual festival. You also should focus on steady supply of hogs at affordable prices. Soft loans and training means nothing if longaniza cottage industry becomes mass production. Look at Santa’s food processing plant, its manufacturing machines are stagnant due to lack of hogs for longaniza and bagnet production. Kulang pa ang action.

Government cannot provide everything. In fact it should not engage directly in business. Private sector should do its part. Less government intervention is better for the business sector. You cannot just go into export without the necessary demand. What i'm driving at is that the City Government is doing its part in strenghtening the longganisa industry. Kung sa tingin mo e kulang pa sa action, give me an honest to goodness suggestion.

This is my honest to goodness suggestion. The city government should request beer magnate Lucio Tan to donate cold storage plant for perishable goods. Longaniza makers can utilize cold storage facility to shelf their products. BTW, may nagyari ba sa inyong imbestigasyon tungkol sa tax misdeclaration ni Lucio Tan?

Does this include cows? If so, what do you do with the skin? Do you do tanning to preserve these skins?
